Anyone who knows the proper way to do this and most importantly, WHERE? We are interested to sell sushi/maki through consignment.

"Through consignment" means what, exactly?
a) Sushi supplier delivers to you and you pay him only when the sushi is sold; or
b) You deliver sushi to someone else and he pays you only when the sushi is sold?

Anyway, I get to sell a good amount at the office though but I really want to place it someplace more interesting.

You sure about this? What will you do with the unsold sushi that is returned to you because it is inedible or nearing its "expiry" date?
Somehow, prepared and perishable food distributed through consignment is good for the consignee, but maybe not so good for the consignor. If the product is sushi, maybe you should consider a different distribution model - such as just-in-time, to help minimize your losses due to spoilage.

have you been to pricesmart lately? they have a section there dedicated to maki/sushi. im not sure how fresh their sushi is but the maki is still edible. not the best per se but its good enough :)
your biggest problem is spoilage.

yeah spoilage. i think ruins the plan the most. guess ill just stick with my jit method.
